Swai Fish Recipes


There are many claims about the health benefits of eating fresh fish. Doctors claim that eating fresh fish can improve heart health, reduce the risk of Alzheimer’s, and possibly benefit overall brain health. However, finding good fish recipes can be a bit daunting. Preparation Tip: For all recipes using Swai fish, thaw and rinse frozen fillets thoroughly and pat dry.

Southern Fried Swai with Country Slaw

for 4 people

*These recipes offer healthy alternative preparations

4-5 oz swai fish fillets, thawed and cleaned, as above

1/2 cup all-purpose flour

3 tablespoons coarsely ground yellow cornmeal

1 egg

¼ cup milk or milk replacer

1/8 teaspoon salt

pinch of cayenne

pinch of black pepper

olive oil for frying

Pour the milk into a shallow container and reserve. Beat the egg well in a shallow bowl and set aside. Mix the flour, cornmeal and seasonings well in a shallow bowl.

Coat the fish fillets first with milk, then with egg, then press each side of the fillet into the flour mixture and set aside.

Pour the oil into the bottom of a deep skillet to a depth of ¼ inch. Heat over medium high heat until a drop of water splashes into the oil. Gently place the battered fish in the pan and fry it for one minute. Using a spatula, gently flip the fillets and fry for another minute. Remove the fillets to a serving plate and cover for a minute or two before serving.

*Healthy Recipe Suggestion: Eliminate breading and frying oil to reduce fat and carbohydrates. Sprinkle the seasoning mix evenly over each side of the fish fillets and coat the pan with nonstick spray. Heat until a drop of water dances on the surface. Place the fish in the pan and cover for 1 minute. Gently flip the fillets, cover and remove from heat. Allow fish to steam for 1 minute; remove and serve.

Cabbage salad

¼ head of green cabbage, finely shredded (about 2 cups)

¼ head of red cabbage, finely shredded (about 2 cups)

2 medium carrots, washed and grated

1 celery stalk, chopped

Dressing room

4 tablespoons of prepared mayonnaise

2 tablespoons rice wine vinegar

2 teaspoons of sugar

Beat the ingredients until smooth. Place the prepared vegetables in a large mixing bowl, cover with the dressing and toss until well blended. Coleslaw recipes can be made ahead of time and tossed before serving, salt and pepper to taste.

Roasted Swai Steaks with Brown and Wild Rice and Brussels Sprouts

for 4 people

Recipe Suggestion: Provide one to two quarters of Meyer Lemon to diners to dress their fish to taste

4-5 oz swai fillets, cleaned and dried

1/8 teaspoon dried dill

1/8 teaspoon pepper

Stir in the seasoning mix and sprinkle evenly over all four fish fillets. Place prepared fillets on a baking sheet covered with foil and sprayed with nonstick spray. Reserve until the garnishes are ready to serve.

Heat broiler to 500 degrees Fahrenheit. Place the fish fillets on a broiler pan or baking sheet covered with foil and sprayed with nonstick spray. Slide fish fillets under broiler for 30 seconds; Take it off the heat. Using a spatula, gently flip the fillets and return them to the broiler compartment. Turn off the heat and let the fish rest for up to 1 minute. Remove from heat and transfer fish to serving platter.

Brown and Wild Rice with Brussels Sprouts

for 4 people

½ cup brown rice

½ cup of wild rice

1 cup Brussels sprouts, washed and quartered

½ small sweet onion, chopped

1 celery stalk, chopped

2 cups of water

1 cup chicken broth

½ teaspoon salt

¼ teaspoon garlic powder

¼ teaspoon sage

½ teaspoon dried parsley flakes

fresh ground pepper to taste

Bring water, broth, and seasonings to a boil. For rice, onion and celery; cover and simmer over medium heat for 40 minutes, stirring once or twice. Add the brussels sprouts, cover, and simmer for another 15 minutes or until the brussels sprouts are tender. Remove from heat and transfer to a serving plate.
