1 pound smoked turkey, coarsely chopped
2 cups of shredded cabbage
1 tablespoon chili powder
1 to 2 chipotles (smoke-dried jalapeños)
1 cup tomato sauce
3 chopped chives
6 ounces or 1 1/12 cups shredded cheddar or Pepper Jack cheese
2 tablespoons olive oil
4 (12-inch tortillas
2 tablespoons chopped flat-leaf parsley or coriander leaves
1 cup sour cream
1 yellow or orange tomato, seeded and finely chopped
salt and pepper
